Ingredient : Yield : 1 whole Ø 22 cm
300 gr. Almond dacquoise [ recipe attached ]
300 gr. Berries crème brullee [ recipe attached ]
400 gr. Dark chocolate mousse [ recipe attached ]
100 gr. Biscuit décor [ joconde ]
50 gr. Chocolate Phyllo pastry Disc
Method :
• Place almond dacquoise on oval cake ring, place joconde along side of cake ring
• Lay berries crème brulee, pipe chocolate mousse on top.
• Place a second layer of almond dacquoise fill with chocolate mousse.
• Put phyllo pastry disc on top decorate with strawberries and chocolate curl

Almond dacquoise
Ingredient : Yield : 1 whole Ø 22 cm
170 gr. Icing sugar
170 gr. Almond powder
3 ea Egg whole
4 ea Egg yolk
300 gr. Egg white
110 gr. Sugar
135 gr. Sifted soft flour.
Method :
• Beat icing sugar, almond powder, Egg, yolk to pale color
• Make meringue of egg white and sugar.
• Fold in sifted flour, place on cake ring, bake at 200 C for 15 mt

Berries crème brulee

Ingredient : Yield : 1750 gr.
1 ltr Fresh cream
250 gr. Sugar
1 ea Vanilla bean [ split , scraped ]
6 ea Egg whole
8 ea Egg yolk
500 gr. Mix berries frozen
Method :
• Mix all ingredient except frozen berries, warm up in bain marie until sugar dissolve
• Pass trough the strainer pour in cake ring which is lined with aluminium foil
• Scaterred mix berries fill with crème brulee bake in bain marie at 160 C for 30 mt
• Deep freeze, take out from ring.

Milk Chocolate mousse
Ingredient : Yield : 1,5 kg
500 gr. Milk Couverture [ melted ]
50 cc Kirsch
1 kg Soft whipped cream
Method :
• Mix whipped cream milk couverture until well blended, stir in kirsch.

Chocolate phyllo pastry disc
Ingredient : Yield :
4 ea Phyllo pastry sheet
100 gr. Icing sugar
50 gr. Butter melted
50 gr. Cocoa powder
Method :
• Brush each sheet of phyllo pastry with melted butter , dust with icing sugar and cocoa powder
• Slightly wrapped and place on cake ring bake at 180 C for 15 mt.
